Title: Three Pepper Relish

Yield: 1 Servings

1 Large, fresh,red,yellow and
  Green bell pepper
2lgShallots,minced
1 Garlic clove, minced,(opt)
10 Basil leaves, cut into
  Jullianne.
1/4cGood olive oil
1tbRed wine vinegar,or
  Lemon juice
  Freshly ground pepper

: Roast the peppers over an open flame, on a grill or under the broiler, turning as needed to lightly char all sides. Place in a paper bag or covered pan 10-15 minutes. Peel, core, remove all seeds, and rinse under cold water. Pat dry, cut into 1/4 " strips and dice. Place in a small mixing bowl.

Add the shallots, garlic, if using, and basil. Pour in the oil and vinegar and combine by tossing. Season to taste with salt and pepper. Refrigerate covered, and let marinate 4-5 hours. ................................MM format; Jeannie Allen
